In Season Garden Pesto


Delicious and nutritious, quick and easy! This is my in season from the garden medicinal pesto. It changes according to what is in season which also compliments what our bodies need at that time. Jam packed with nutrients, Vit C, easy to absorb iron, calcium, magnesium, natural immune boosting garlic, onion flowers and lemon. Blended with local olive oil and a handful of almonds. Add this to a warm pasta, quinoa or rice dish for a quick yet nourishing meal for a New Mama. Keep covered in the fridge for up to 3-4 days. Nasturtium, chickweed (wonderful healer and lactation support), Okinawa spinach, sow thistle, parsley (just a little), mushroom herb, onion flower, garlic (also promotes lactation and bubs love the taste!), lemon.


Ingredients:

- Edible greens, aside from those mentioned above, this could also be; basil, coriander, oregano, sorrels, dandelion greens, mint, roquette, cress, plantain, blanched nettles, asian greens and much more

- Garlic

- Olive Oil or other nutritious oil

- Nuts and Seeds; macadamias, almonds, cashews, pepitas, sunflower seeds, walnuts etc

- Lemon, Lime or vinegar

- Salt


Sorry I don't have exact quantities for this one. I will work on that and come back to edit. I'm estimating about 1cups of greens, 1/4cup of olive oil, 1/4 cup nuts and seeds, lemon juice and salt to taste.

Roughly chop the greens and garlic. Add to food processor with nuts and drizzle in olive oil as you whiz. Whiz until mostly blended. Scoop out and add lemon juice and salt. Eat now or save in fridge in covered container with a drizzle of oil on top to keep green.
